Country Executive Chef - USA 🇺🇸
Main Mission: As the Big Mamma Ambassador in the United States, you will be the guarantor of culinary excellence, operational efficiency, and the group's culture. Your mission is divided into three pillars:
Drive the Excellence & Quality Control
Standards & Consistency: Guarantee food quality, consistency, and efficiency for 100% of dishes made across all US locations and future openings.
Business partners: Collaborate with prospective business partners to ensure operational and support integration across food market and restaurant ventures
Quality Targets: Aim for customer experience kpis by maintaining rigorous control over dish quality and speed at the pass
Innovative R&D: Lead research and development sessions to adapt Italian traditions to the American market, creating seasonal recipe cards and ensuring successful menu implementations
Growth & Operations Management
New opening launch: Responsible for the complete kitchen launch, including equipment selection, tools, people onboarding, and setting up service operations.
Efficiency and Profit: Act as the primary person responsible for kitchen efficiency, ensuring that food costs and people costs remain strictly in line with the budget targets
USA Development: Define the culinary expansion strategy for future Big Mamma restaurants, staying "one step ahead" with people mapping and site analysis.
Audit & Hygiene: Ensure a monthly hygiene score of >90% and maintain total respect for equipment and group processes.
HR Culture & Team Leadership
Talent development: Responsible for kitchen mapping to ensure the right person is in the right place at the right time for all American openings.
Recruitment & Employer Branding: Support recruitment strategies and direct sourcing of top talent, acting as a key player in employer branding within the US market
Mentorship & Talent Review: Lead by example, fostering growth through talent reviews and delegating knowledge to ensure the "Squadra" becomes increasingly autonomous
Candidate Profile
Experience: Proven experience as an Executive Chef in international contexts or large-scale openings.
Leadership: A strong, demanding team player who is disciplined, organized, and capable of formalizing a clear vision through roadmaps and reporting.
Mindset: An entrepreneurial spirit who embodies the "white jacket" responsibility—inspiring others and leading by example.
