At Big Mamma, the Demi Chef de Partie is a key step in the kitchen journey.

You work closely with the Chef de Partie, taking responsibility for part of the station while continuing to develop your technical and organizational skills.
In our restaurant Giorgia in Munich, you’ll grow in a structured, high-volume kitchen with clear standards and strong team support.

🚀 Your role & responsibilities

As a Demi Chef de Partie, you support and progressively take ownership within your section:

• Assist in managing a station during prep and service

• Ensure quality and consistency of dishes

• Control Mise en place and maintain hygiene standards (HACCP)

• Support stock organization and basic food cost understanding

• Apply solid cooking techniques and follow recipes precisely

• Collaborate closely with Chef de Partie and team

• Support and guide junior team members when needed

👉 This role is the bridge between Commis level and full Chef de Partie responsibility.

💡 What we’re looking for

• Previous experience as Commis Chef or similar position

• Solid kitchen fundamentals and willingness to grow

• Ability to work in a fast-paced, structured environment

• Team player with a proactive mindset

• Attention to detail and reliability

👉 English required; Italian is a plus
